Mahasamund:- Bamboo is used in many ways. Mostly bamboo is used for house building. But today we are talking about such a vegetable made from bamboo which turns black when the bamboo grows. It is known as Kalir in Chhattisgarh. Kalir starts coming as soon as the rains start and people also like it a lot. You can eat it by adding it with tomato, ladyfinger, ridge gourd and many other vegetables. This vegetable is often found in rural areas because bamboo is produced in large quantities in rural areas. Along with this, there are bamboos in the forests around the rural areas as well, from where the villagers pluck Kalir, make its vegetable and eat it with great relish.
How is this vegetable made?
After plucking it from the jungle, its outer skin is peeled off, leaving the black part in the middle. It is cut into small pieces and immersed in water for 10 to 15 days so that it becomes completely soft. After this, it becomes edible. Its taste is very sour, which is used to make vegetables sour.

Especially in rural areas, it is used to make tomato chutney, in which Kalir is added to tomato chutney. This makes its taste even more sour. People of rural areas like it a lot. Along with this, it is cooked by adding it to many vegetables including fish, ladyfinger.
